Make-ahead breakfasts are the best. So often I focus on meal prep and planning for lunches and dinners, and breakfast is kind of an afterthought. If you haven’t yet given overnight oats a try, they’re a great way to get an easy breakfast in before you tackle your daily to-do list.

They’re quick to make, with simple ingredients you probably already have on hand. While I’m going to share a basic overnight oats recipe with you, you can also get creative with this and try different flavors and favorite toppings.

You can’t go wrong with a little chocolate and peanut butter, though, in my opinion!

This overnight oats recipe has a creamy texture and is packed with nutritious old-fashioned oats, chia seeds, yogurt and milk. The maple syrup gives it a bit of sweetness, while the peanut butter and chocolate combo (the best part!) make it a bit of a treat.

How to Make Overnight Oats

It doesn’t get any easier than this. When making overnight oats, you simply combine all of the ingredients, cover, and refrigerate overnight! This allows the oats and chia seeds absorb the liquids and create a delicious, pudding-like texture and great flavor.

Are Chia Seeds Necessary?

This might be the one ingredient you have to purchase, and while you can omit them, I recommend you give them a try.

Chia seeds will help improve the texture of any overnight oats recipe, and are a great source of omega-3 fatty acids, protein, calcium, zinc, fiber, and more.

Peanut Butter Chocolate Chip Overnight Oats Recipe

You will be able to make this oatmeal recipe in 10-minutes or less the night before, and enjoy it the next morning. For best results, consume within 3-4 days. The oats will soften more the longer they are left in the fridge.

Ingredients for the Base Recipe

All you need to make your batch of overnight oats is:

  • 1 Cup Rolled Oats
  • 1 Cup Milk
  • ½ Cup Plain Yogurt
  • ¼ Cup Mini Chocolate Chips
  • 2 Tablespoons Peanut Butter
  • 2 Tablespoons Chia Seeds
  • 1-2 Tablespoons Pure Maple Syrup, to taste
  • 1 Teaspoon Vanilla Extract
  • Pinch of Salt

Make sure you use rolled oats (also known as old fashioned oats) rather than quick oats (instant oats) or steel cut oats in this recipe, as the texture won’t turn out quite the same.

You’ll get about 2-3 small servings of creamy overnight oats out of this recipe.

Simple Steps to a Delicious Breakfast

In a medium bowl, mix all the ingredients together. If you’d like, you can leave out the chocolate chips and just use them as topping.

Cover and refrigerate at least one hour, or overnight. I love using single serving bowls with lids or mason jars to store overnight oats in perfect portions.

The next day, you may top with additional chocolate chips, yogurt, and/or peanut butter as desired.

How to Eat Overnight Oats

Many overnight oats recipes are eaten straight from the fridge. You can heat them up, but give them a try cold, first!

If you do prefer your overnight oats warm, microwave for about 30 seconds when you’re ready to eat. That’s another reason I love these serving bowls, as they can go straight into the microwave!

Tips for Customizing the Best Overnight Oats

This recipe works well with both regular yogurt and milk and non-dairy milk and yogurt. You could also use another milk of choice (almond milk, oat milk, coconut milk, etc.) if you prefer. Greek yogurt would also be a find substitute.

Play around to find your favorite flavor combinations! Try omitting the chocolate chips and add in ¼ cup of your favorite nut, seed, or dried fruit. Or sub ⅓ cup of fresh berries like blueberries and raspberries, or a sliced banana. Any of your favorite fruits would be worth a try! There are so many delicious flavor options when it comes to overnight oats.

The peanut butter can be substituted with any nut or seed butter like almond butter or sunflower seed butter.

Chia seeds can be substituted for 2 tablespoons of ground flax seed. Or omitted entirely.
