Chicken fajitas are a healthy, easy meal you can throw together on your busiest nights. And this homemade fajitas recipe just takes a few ingredients and cooks up in about half an hour.

Pair with some chips and salsa, Pico de Gallo, black beans or refried beans and rice, and your other favorite toppings and you’ve got a guaranteed crowd pleaser that stands up to your local Mexican restaurants!

Easy Chicken Fajitas Recipe

This recipe needs just a few simple ingredients to whip together.

You’ll be making your own seasoning mix with this recipe from herbs you probably already have in your cabinet. Get your kids involved with this step – they can easily help measure and combine ingredients for the homemade fajita seasoning!

You’ll also want to prep some chicken, red bell peppers, green bell peppers, yellow peppers, and onions by cutting them into thin strips. You can help teach your older kids how to help you with this step, too; you might like these kid-safe knives when they are first learning how to cook with you.

What You’ll Need

Not much! You’ll just need a single sheet pan – I just love recipes that don’t utilize a ton of dishes I need to wash later. Everything will be mixed together right on the pan, then put in the oven to bake.

Chicken Fajita Ingredient List

Here’s a list of the ingredients you’ll need to make these delicious chicken fajitas.

1 ½ pound of boneless skinless chicken breasts, cut into strips
1 red, green and aloha pepper
1 small onion
1 teaspoon of chili powder
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
A pinch of dried oregano
½ teaspoon of black pepper
1 tablespoon of olive oil
A pinch of salt
Flour tortillas or corn tortillas for serving

Grab your largest sheet pan and add more chicken to the recipe if you have a large family (or you want leftovers!).

Instructions

1. Preheat the oven to 375 degrees.

2. In a small bowl, combine the seasonings. Mix them with a fork and set aside.

3. Slice the chicken breasts and peppers and onion into strips.

4. Toss the fajita veggies and chicken together on a sheet pan. 

5. Drizzle olive oil over the chicken and veggies.

6. Sprinkle the seasonings you mixed together in the small bowl over the chicken, peppers and onion. 

7. Toss the vegetables and chicken around on the sheet pan to make sure everything has a gentle coating of seasoning.

8. Bake for 25 minutes or until the chicken is cooked thoroughly.

Serve with fajita shells or warm tortillas, sour cream, cheese, fresh cilantro, and any other favorite fajita toppings!

Store any leftovers in an airtight container.

If you don’t want to bake the chicken, you could certainly use a cast iron skillet or large nonstick skillet to cook everything on the stovetop. I would recommend using a tablespoon of oil and browning the chicken a bit first, then adding the veggie mixture and seasonings to finish cooking.
