Your Family’s New Favorite (Kid Approved!) Breakfast Casserole

My kids can be pretty picky, so when all four of them gobbled it down and asked for seconds, I knew I had struck gold.
This is an easy, yummy breakfast casserole is one of those tried and true recipes that was brought to me by a friend when we had our last little one. I’ve tweaked the recipe ever so slightly and it’s a winner.
Fresh veggies, eggs, sausage, potatoes, cheddar cheese…what’s not to love?

What You’ll Need
You’ll need a few simple ingredients on hand for this sausage breakfast casserole:
- 2 sleeves Regular Pork Sausage
- 1 Bell Pepper, chopped
- 1 Onion, chopped
- 3 cups Frozen Hash Brown Potato Chunks
- 2 cups Shredded Cheddar Cheese
- 1 cup Bisquick
- 2 cups Milk
- 1/4 tsp Pepper
- 4 Large Eggs
- Crushed Red Pepper & Cavenders Seasoning (to taste)
One-Pan Breakfast Casserole Prep
Another great thing about this hearty breakfast casserole is that you can cook most of it in one large pan (minimal clean-up is a great thing!). You will need another large bowl to mix some of the wet ingredients.
Preheat the oven to 400 degrees, then cook the breakfast sausage and veggies in a large skillet on medium-high heat. The original breakfast recipe called for red bell peppers, which taste great! This time around I only had a green one on hand, and I liked it just as much. You can use 2 lbs of regular pork sausage, or one regular and one hot if you like a little extra kick (we love using spicy sausage in this recipe!).
After cooking, drain and add in the potatoes, 1.5 c of the cheese, then pour mixture into a greased 13×9 casserole dish in an even layer.
If you prefer, you could use frozen hash browns in as a substitute – they work just as well!
Whisk eggs together with the Bisquick, milk, and pepper in a large bowl until well blended. As recommended by our friends who first introduced us to this easy recipe, we like to add some Cavenders seasoning and some crushed red pepper flakes. (I don’t measure, I just sprinkle in a little bit of each!). Pour the egg mixture over sausage mixture in the baking dish:
Bake uncovered for 40-45 minutes. Sprinkle with remaining cheese and bake for 1-2 more minutes until the cheese is melted. Cool 5 minutes before serving.
And voila! We enjoy this reheated for breakfast the next morning (just pop a slice into the microwave for a minute or so!), and I honestly typically make it for a breakfast-for-dinner kind of night. I may be biased, but I think it’s the best breakfast casserole recipe out there.

Kid-Approved Breakfast Casserole
An easy sausage, egg, cheese & potato casserole the entire family will love!
Ingredients
- 2 sleeves Regular Pork Sausage
- 1 Bell Pepper, chopped
- 1 Onion, chopped
- 3 cups Frozen Hash Brown Potato Chunks
- 2 cups Shredded Cheddar Cheese
- 1 cup Bisquick

Instructions

- Add in potatoes & 1.5 cups of the cheese; pour into greased 13x9 baking dish.
- Whisk together Bisquick, milk, eggs, pepper and optional seasonings until well blended. Pour over sausage mixture.
- Bake uncovered for 40-45 minutes. Sprinkle with remaining cheese and bake for 1-2 more minutes until the cheese is melted. Cool 5 minutes before serving.
