Funfetti Pancake Recipe

Who says pancakes have to be plain and boring? These Funfetti pancakes will be the life of the breakfast party! Although perfect for birthdays or the first day of homeschool, they’re not JUST for special occasions; they’re a guaranteed hit any day of the week.

What You Need to Make Funfetti Pancakes

You’ll basically make these just like any other pancake — they’re super easy, and I love the pop of color the sprinkles add!

A good skillet or pancake griddle is a must, and I also use an electric mixer to mix the glaze ingredients together.

  • 1 cup pancake mix (any brand will do)
  • 1 cup yellow cake mix
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 3 tablespoons rainbow sprinkles
  • Whipped cream (optional, but highly recommended for topping)
Funfetti Pancake Ingredients

For the Glaze:

  • 2 tablespoons unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 3 tablespoons milk
  • 2-3 cups powdered sugar

How to Make Funfetti Pancakes

Begin by gathering all your ingredients and a large mixing bowl. Preheat your griddle or non-stick pan over medium heat.

In the mixing bowl, combine the pancake mix, yellow cake mix, eggs, vanilla extract, and milk. Whisk everything together until you have a smooth batter. Don’t worry if there are a few lumps – they’ll disappear as the pancakes cook.

Pancake batter

Once your batter is ready, gently fold in the rainbow sprinkles, ensuring they’re evenly distributed throughout the batter.

Funfetti Pancake Mix

Grease your preheated griddle or pan lightly with butter or cooking spray. Then, using a ladle or measuring cup, pour a portion of the batter onto the griddle to form your pancakes. Cook until bubbles begin to form on the surface and the edges are set, usually around 2-3 minutes.

Carefully flip the pancakes and continue cooking for another 2-3 minutes, or until they’re golden brown on both sides and cooked through.

While your pancakes are cooking, you can prepare the glaze. In a separate bowl, mix together the melted butter, vanilla extract, and milk. Gradually add powdered sugar until you reach your desired consistency – you want the glaze to be thick but pourable.

Once your pancakes are ready, stack them high on a plate and drizzle generously with the glaze. For an extra touch of indulgence, top with a dollop of whipped cream and a few more sprinkles.

Serve your Funfetti pancakes warm and watch as smiles light up your kids’ faces! Feel free to add anything else to your special breakfast that your family would love — we have orange juice, sausage, and eggs with ours!

Tips for Perfect Pancakes

While whipping up a batch of Funfetti pancakes is a breeze, there are a few key tips and tricks to ensure they turn out perfectly every time.

Preheat Your Griddle or Pan: Before you even think about pouring that batter, make sure your cooking surface is nice and hot. This ensures that your pancakes cook evenly and develop that coveted golden-brown exterior.

Don’t Overmix the Batter: It can be tempting to whisk away until your arm gets tired, but resist the urge! Overmixing can lead to tough pancakes. Instead, stir until the ingredients are just combined, leaving a few lumps in the batter. Those lumps will disappear as the pancakes cook.

Let the Batter Rest: After mixing your batter, give it a few minutes to rest. This allows the ingredients to meld together and gives the pancakes a lighter, fluffier texture.

Watch for Bubbles: When you pour the batter onto the griddle, keep an eye out for bubbles forming on the surface. Once you see those bubbles, it’s time to flip! This ensures that your pancakes cook through evenly without burning.

Flip with Confidence: Speaking of flipping, don’t be afraid to flip your pancakes with gusto! Use a spatula to gently lift the edges before flipping in one swift motion. And remember, practice makes perfect – so don’t worry if your first flip isn’t flawless.

Keep ‘Em Warm: If you’re cooking up a big batch of pancakes, you can keep them warm in a low oven while you finish cooking the rest. Just place them on a baking sheet in a single layer and cover loosely with foil to keep them from drying out.

Experiment with Toppings: While Funfetti pancakes are delicious on their own, don’t be afraid to get creative with your toppings! From fresh fruit and whipped cream to chocolate chips and syrup, the possibilities are endless.

How to Store and Reheat Pancakes

If you find yourself with leftover pancakes, the best way to keep them fresh is by refrigerating them. Allow the pancakes to cool completely, then place them in an airtight container or zip-top bag, separating each pancake with parchment paper to prevent sticking.

Stored properly in the refrigerator, leftover pancakes can last for up to 2-3 days. Any longer, and they may start to lose their fluffy texture and become dry.

Freezing Pancakes

For longer-term storage, consider freezing your leftover pancakes. Again, allow them to cool completely before stacking them with parchment paper between each pancake to prevent sticking.

Once stacked, place the pancakes in a freezer-safe bag or container, removing as much air as possible before sealing. Properly stored, frozen pancakes can last for up to 1-2 months.

Reheating Pancakes

When you’re ready to enjoy your leftover pancakes, there are a few ways to reheat them while preserving their fluffy texture. One easy method is to use a toaster. Simply pop the pancakes into the toaster on a low setting until heated through and crispy around the edges.

Alternatively, you can reheat your pancakes in the oven. Preheat your oven to 350°F (175°C), then place the pancakes on a baking sheet in a single layer. Cover loosely with foil to prevent them from drying out and bake for 5-7 minutes, or until heated through.

If you’re short on time (which as a busy homeschool mom, I usually am!), you can also reheat pancakes in the microwave. Place them on a microwave-safe plate and cover with a damp paper towel to prevent them from drying out. Microwave on high in 30-second intervals until heated through, flipping halfway through for even heating.

With these storage and reheating tips, you can enjoy the deliciousness of Funfetti pancakes any time the craving strikes – whether it’s for breakfast, brunch, or a midnight snack. So go ahead, indulge and savor every fluffy bite!
