Ever since we began homeschooling, we’ve had a fun “first day of homeschool” tradition: Funfetti pancakes!

These pancakes are so easy to make, and my kids look forward to them each year. I don’t often like to do overly-sweet breakfasts, BUT, I can make an exception for special occasions.

Who says pancakes have to be plain and boring? These Funfetti pancakes will be the life of the breakfast party! Although perfect for birthdays or the first day of homeschool, they’re not JUST for special occasions; they’re a guaranteed hit any day of the week.

What You Need to Make Funfetti Pancakes

You’ll basically make these just like any other pancake — they’re super easy, and I love the pop of color the sprinkles add!

A good skillet or pancake griddle is a must, and I also use an electric mixer to mix the glaze ingredients together.

Ingredients:

  • 1 cup pancake mix (any brand will do)
  • 1 cup yellow cake mix
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 3 tablespoons rainbow sprinkles
  • Whipped cream (optional, but highly recommended for topping)

If you’re short on time (which as a busy homeschool mom, I usually am!), you can also reheat pancakes in the microwave. Place them on a microwave-safe plate and cover with a damp paper towel to prevent them from drying out. Microwave on high in 30-second intervals until heated through, flipping halfway through for even heating.

  • 1 C. Pancake Mix (any brand)

Instructions

  1. Place all ingredients for pancakes in bowl and whisk until well blended (a few clumps are ok).
  2. Bake on a hot griddle or pan until bubbles begin to form on the top, and the edges are set (about 2-3 minutes). Flip and cook until done.
  3. To make the glaze, mix butter, vanilla and milk with an electric mixer, while slowly adding in powdered sugar until desired consistency is reached.
  4. Drizzle glaze over warm pancakes, top with whipped cream and sprinkles, and serve!
