One of my favorite parts about homeschooling is that we don’t have to rush out the door every morning to catch a school bus, or get to school at the crack of dawn. Now, my crazy kids are still early risers…I, on the other hand, like to take advantage of catching a few extra winks in the AM.

This means that sometimes my kids need something easy for breakfast they can grab on their own in the morning if they don’t want to wait for me.

Their absolute favorite? Banana chocolate chip muffins!

The first time I whipped these up, I knew I had a winner. These delicious muffins have become a staple in our home that I make almost weekly (or at least anytime I have two overripe bananas sitting on the counter. Which is often.).

Why do I love this recipe? For starters, it has bananas in it, so it’s practically a health food by default, right?

But in all seriousness, it takes me about 10 minutes to whip up, and I usually have all the simple ingredients on hand. Plus, I can mix it all in one large bowl, so there is not too much clean-up.

It’s really easy to make a quick batch in the morning if I need to, but usually I’ll just throw it together after dinner as everyone helps clean up the kitchen. Then they’re ready to go in the morning!

And, these banana chocolate chip muffins are so easy to make, the kids usually like to help get in on the action. If you have older kids, they could probably easily tackle this delicious recipe on their own.

Best Banana Chocolate Chip Muffins Recipe

You’ll find my tried, tested and true recipe below, along with some quick notes, and a printable version at the end.

Make these banana chocolate chip muffins weekly for easy breakfasts and snacks the whole family will enjoy! The banana flavor is perfect (not too overpowering), and the chocolate makes it feel like a great treat.

What You’ll Need

When making these banana chocolate chip muffins, I use a single batter bowl with a lid to mix everything. Wet ingredients first, then dry ingredients.

Don’t even think about grabbing a second bowl or a hand mixer – this is as simple as it gets!

You’ll also need a nonstick muffin pan or a silicone muffin pan, and a cookie scoop. The cookie scoop is optional (one of my helpful tips, though – this tool is really the best way to fill a pan with muffin batter!).

Grab a fork to mash bananas, and a whisk or wooden spoon for mixing.

If you don’t have all of those items, I definitely recommend picking them up, as they are great staples to have in any kitchen!

Banana Chocolate Chip Muffin Ingredients

1.5 c. all purpose flour
2/3 c. white sugar
1.5 t baking powder
1/4 t salt
2 ripe bananas, mashed
1 large egg
1/2 c. unsalted butter
1/4 c. milk
3/4 c. semi-sweet chocolate chips

This will make 12 banana chocolate chip muffins.

Directions

First, preheat your oven to 350 degrees and spray your muffin pan with nonstick spray or line with muffin cups.

Add butter to your glass batter bowl and melt it in the microwave. Drop an egg into the melted butter and whisk it in. Add milk to the same bowl.

Then, add your ripe bananas. I break each one in half and add it right to the bowl, mash them up in the bowl with a fork, and give everything a good stir with my wooden spoon.

In the same bowl (I told you, one bowl for the entire recipe – so easy!), use measuring cups to add in the flour, sugar, baking powder, and salt. Stir until just blended (do not overmix).

Stir in chocolate chips. Let your kids sneak a few of them (they love this part!). You can use mini chocolate chips or normal size. I will sometimes use milk chocolate, dark chocolate, or even white chocolate chips, and they still taste great!

I know you’ll want plenty of chocolate chips; the 3/4 c. recommendation in the recipe is a great ratio, so resist the urge to add more!

Next, divide batter into muffin pan.

Bake your batch of muffins 25-30 minutes until golden brown. Use the toothpick test to make sure the muffins are done, then transfer to a wire rack to cool while you try to keep your family from gobbling them up right away!

When they cool to about room temperature, store your fluffy muffins in an airtight container, ready for breakfast the next morning.

Instructions

  1. Preheat oven to 350 degrees. Spray muffin pan with nonstick spray.
  2. Melt butter in the microwave in a medium bowl.
  3. Whisk the egg into the melted butter, then pour in the milk. Add the mashed bananas to the bowl and mix.
  4. To the same bowl, add in the flour, sugar, baking powder, and salt. Stir just until blended (do not overmix).
  5. Stir in chocolate chips.
  6. Divide into muffin pan and bake 25-30 minutes. Transfer to baking rack to cool.
